Potato Pancakes

When I miss home, I resort to comfort food. I either make noodles smothered in butter or potato pancakes. Both of these dishes remind me of my mom and daddy’s cooking. When I was young, my dad loved making a deal with me. If I would peel potatoes, while he walked our dog, he would make potato pancakes. So I would take a small stool to seat on, place a newspaper on the floor and start peeling away. After about 10 potatoes, my hands were ready for a break! So today I would like to share with you this amazingly tasty recipe.


First you peel potatoes. Since I was making the potato pancakes for myself, I only peeled two potatoes. Two potatoes is more than enough for one person.


Next you need to shred the potatoes. Please note that I used small size shredder holes (smaller than what you would use for hashbrowns).


Then you transfer shredded potatoes into a bowl and add 1 large egg and 1 table spoon of flour. Mix everything well and move the bowl near the stove.


Add olive oil to the frying pan (be generous with the oil) and wait until the pan is hot. Drop potato mass into the frying pan in a form of small pancakes and fry them on both sides until golden brown.



Transfer cooked potato pancakes to a plate. I love dipping my potato pancakes in sour cream, which brings memories back of my childhood.

  1. Yum! These remind me of the potato cakes my grandma used to make me. I think she fried hers in a stick of butter though. :)

  2. yummy... those look great! I made some, but added cheese and onion to them.... the hubs ate them up like i made fried chicken!!! hahaha!

    I might have to make those tomorrow morning!!
